1 whole chicken
1 tablespoon salt
2 teaspoon ground black pepper
5 1/2 pints chickenstock
1 1/4 cups shao xing wine
3 scallion finely chopped
3 slices ginger root
Prick the skin of the chicken with a fork,then rub salt and pepper all over it,put the chicken in a heatproof bowl cover with foil and put a heavy weight on top and leave in the refrigerator for 12 hours.
Place the chickenstock,shao xing wine in a pan and bring to the boil,remove from the heat and allow to cool then pour over the chicken and leave to marinade for 5 a 6 hours.
Either steam the chicken with the scallions and the ginger for 1 hour or cook in the boiling sauce for 30 minutes.
Serve hot or cold.

This is approximately 83 bottles of my wine collection - which is somewhere over 200 bottles. Most of the bottles here are reds. There are a couple of whites here. Normally you wouldn't want to rack whites like this for any real length of time, but I am out of space in the extra refrigerator I have in the garage just for storing whites at their preferred cooler temperature. I am probably going to end up opening these relatively soon anyway, so it isn't really that big of a deal.
